I am hanging out for the 1:100 RNZAF 727-100 releases
It really is a golden age for model airliner builders, thanks to the likes of companies like Hawkeye, Red Roo etc.

No, not really, because there is a chap in England who has already done them. He posts on ARC Air forums under the handle "Rich W". He has done the A320, A330, ATR-72, E-190, F-50, F-100, 737, 777-300ER and a hypothetical 787.
